Back to school season is officially upon us. Parents, students, and teachers need some easy and quick recipes that they can rely on for this busy transition. And that is exactly what we have for you today: 14 back to school recipes (breakfast, lunch, & dinner)!!!! Ya know, in case you somehow missed the bold text in the picture above lol!
I have organized this list into Breakfast, lunch, and dinner recipes to make life easier for you!
For the breakfast recipes I know how hectic mornings can be so I have included two recipes that can be made in advance and two that take 12 minutes or less to prepare in the morning. You know that I am a firm believer of having a health breakfast to get your day started.
Since I don’t have kids I don’t have any cute Instagram worthy kid friendly school lunches. And TBH packed lunches in general are not currently in my everyday life – both Paul and I eat lunch at home. Those packed lunch ideas on my blog are few on far between. BUT I have included two recipes that would work for a packed lunch for both kids and adults. AND included are a few recipes that also work for either lunch side option or as an after school/work snack. BONUS!!!
The dinner recipes are all quick and easy to make, 45 minutes or less, and require very few dishes. It can be a challenge to get a good meal on the table on a weekday evening that’s healthy. You deserve a feel-good-dinner that doesn’t take over you evening.

BREAKFAST RECIPES
12 Minute Savory Oatmeal with fried Eggs
Savory oatmeal may sound strange but trust me, it’s real good!!! The juicy tomatoes, melted cheese, creamy avocado, and runny egg yolk go so well with the starchiness of the oats. This is a go-to breakfast for us when the mornings begin to get cooler and the tomatoes are still in their prime – like right now, to be exact! Best part is it really keeps me fueled until lunch.

10 Minute Weekday Huevos Rancheros
Even though I am a food blogger I tend to get in a rut and sick of the same old breakfast day in and day out. But I rarely get sick of good Mexican food. These weekday huevos rancheros is a fun way to switch up your breakfast routine. It only takes 10 minutes!!!

Pumpkin Breakfast Cookies (Gluten Free + Vegan)
Fall is in the air and so is the smell of pumpkin baking! These pumpkin breakfast cookies are the perfect breakfast to make in advance and then eat them on the go. They’re packed with healthy ingredients and only take 20 minutes to make. Sunday night food prep here we come!

Mexican Crock Pot Breakfast Casserole
Mexican for breakfast, again?! You better believe it!!! This crock pot casserole is another one to prep on Sunday night and let it cook while you’re sleeping. In the morning you will have a hearty breakfast that makes great leftovers. Can you say breakfast all week long?!

Quinoa Tabbouleh Salad
Quinoa tabbouleh salad is great for packed lunches (or even a quick lunch at home) because it can be made in advance and it gets better as it sits. Packed with veggies and plenty of protein from the quinoa!

Avocado Tuna Salad Lettuce Wraps
What better lunch than tuna salad?! This tuna salad uses mashed avocado instead of mayo and mashed chickpeas to bulk it up a little. For a packed lunch you can make the salad in advance and pack a few of the lettuce leaves in a baggie to assemble at lunch time. OR you can easily turn it into a tuna salad sandwich.

Healthy Greek Yogurt Dill Dip
Okay, Greek yogurt dill dip and the hummus below will probably make a lot of my lists because they are so versatile. This dill dip couldn’t be easier to make and lasts for up to 1 week in the fridge. Pack it in lunch with a few cut up veggies, or save it for an after school/after work snack.

Hummus
Hummus is my love language. Same as the dill dip, it is easy to make and lasts in the fridge for up to 1 week. Pack it into a lunch with veggies or pita chips for dipping or save it for that after school/work pick-me-up.
P.S. I have plenty of other hummus flavors and varieties where this came from….sometimes it’s fun to switch things up.

Chocolate Mint Protein Bars
I LOVE these protein bars!! They’re super healthy and packed with protein but they taste like a mint chocoalte brownie! YES!!! Make these on the weekend and stash one of them in a packed lunch for a healthy treat or snack.

15 Minute Creamy Tomato Basil Soup
Tomato soup in 15 minutes!? Yes!!! Who doesn’t want that for dinner, especially in the fall?! Add another 5 minutes to your cook time for a grilled cheese sandwich so that you have an even heartier dinner. Time to get cozy!!!

You are 1 pan and 30 minutes away from juicy chicken fajitas for dinner! I’m not sure which is the best part? Eating fajitas or only having one dish to clean up after dinner?!

Salmon Cakes with Greek Yogurt Horseradish Dip
This is probably one of my fave dinner recipes on the blog. These salmon cakes are crispy on the outside and tender on the inside. They only take 40 minutes to make and the leftovers are THE BEST!!!

Maple Dijon Marinated Pork Chops with Apples and Cabbage
Another 30 minutes, 1 pan recipe for you! There is a little prep time involved with marinating the pork, but it only takes 5 minutes and is well worth it. That pork is juicy and tender. Those apples and cabbage are roasted to perfection.

1 Pan Pistachio Crusted Salmon with Zucchini
Want a quick dinner? Fish is the way to go because it cooks up in no time. Again, this recipe is made in 30 minutes and only uses 1 pan (and a food processor to make the pistachio crust). Easy and hearty, you will love this one!
