Okay, I know that it’s Labor day today….or is it Memorial day?! I dunno, I always get them confused and have to google which one is which haha. Either way I hope that you are enjoying your day off, hopefully diving into that taco dip I shared with you on Friday.
Really, this is perfect because now you can make these pina colada matcha overnight oats tonight after all your fun is done and you can start your Tuesday off on the right foot. And guess what, it only takes you 10 minutes to make! 5 minutes to cut up a pineapple and 5 minutes to mix everything together. Then a refreshing breakfast will be waiting for you in the morning!
I don’t know why it’s taken me until September to share a recipe for overnight oats with you because I’ve been making them all summer long. September means back to school, which means busy mornings. EASY, make ahead breakfasts FTW!!!

If you’re not familiar with overnight oats they work like this: mix rolled oats and milk together along with any flavors you like. Pop it in the fridge, and overnight the oats will have absorbed the liquid making them soft and resulting in almost a pudding-like consistency. You eat them cold and they are the most refreshing breakfast you’ll ever have!
Okay aside from maybe a smoothie lol!
We usually eat a hard boiled eggs or some other form of eggs on the side with the overnight oats because PROTEIN is how I roll in the morning.
The idea for Pina colada matcha overnight oats came to me when I was making my pina coladas…..you know, the adult beverages? The type of pina colada that actually has rum in the?! Yes, those.
Rest assured, there is no rum in these pina colada matcha overnight oats. So yes, you can feed this to your kids. The inspiration part was the coconut and pineapple combo and then the matcha was added in there last minute…because matcha is life!
And trust me the matcha was a good idea. It adds a nice grassy hint that goes nicely with the sweet pineapple and coconut flavors. Plus you are getting a little caffeine boost directly in your breakfast. How cool is that?! You can pretty much just skip the coffee!!!
Less to mess with in the morning, you’re welcome! HA! kidding, because I know all you people out there that are obssed with their coffee! I’m that way too….only not with coffee but with tea!
I know you will love how simple and delicious these matcha overnight oats are. They’re almost dessert like, but in a healthy breakfast energizing kind of way that will keep you going until lunch.

Description
Pina colada matcha overnight oats are packed with pineapple, coconut, and matcha. They’re made at night and ready to eat for breakfast in the morning.
Ingredients
- 1/2 teaspoon to 1 teaspoon matcha powder
- 3/4 cup almond milk
- 1/2 cup light canned coconut milk
- 2/3 cup gluten free old fashioned oats
- 2 tablespoon chia seeds
- 2 tablespoon agave nectar or maple syrup
- 1/4 cup shredded coconut (unsweetened)
- 1 cup fresh pineapple, chopped, divided
Instructions
- Make a matcha powder paste: Add the matcha powder to a large mason jar or bowl. Add 1 tablespoon of hot water and whisk the matcha until a paste forms and it’s smooth.
- Stir in remaining ingredients: Stir in the almond milk, coconut milk, oats, chia seeds, agave nectar, and shredded coconut until well combined. Stir in 1/2 cup of the pineapple (reserving the other half for topping in the morning).
- Refrigerate: Cover and chill oats for 6 to 8 hours (or overnight) to allow the liquid to soak into the oats and soften them.
- Finish:In the morning give the oats a good stir. Transfer to a serving bowl and top with the remaining pineapple. Enjoy immediately.
- Leftovers: It will keep for up to 2 days in the fridge, if it gets too dry stir in a little extra almond milk.
Notes
Serving size: We usually eat eggs on the side of our overnight oats so we get 4 servings out of the oats. If your main breakfast is the overnight oats than you will probably get 2 servings out of it.
