Well…fajita seasoning, really. In bulk form.
The fajita seasoning is really important. It’s what gives the fajitas all of that good Mexican flavor. Without it, you would just have some bland meat and bell peppers.
Fajitas are one of my favorite Mexican dishes. The sizzling bell peppers, onions, and meat of choice, all wrapped up in a tortilla with your favorite toppings. Seriously, you can’t go wrong!
I am obsessed with my sheet pan chicken fajitas recipe. Using a sheet pan is such a simple way to make fajitas. I shared the recipe years ago, and found that we made it a lot in our everyday life, so I updated it several months ago.
My husband will even offer to make the sheet pan chicken fajitas. Guys, that is saying something, as cooking isn’t his favorite task.
I am all for finding more of those recipes that my husband doesn’t mind making.
This recipe for fajita seasoning, made in bulk, was my Paul’s request. When he told me that his least favorite part about making the sheet pan chicken fajitas was mixing together the fajita seasoning…I told him we could make it in bulk to keep on hand. He LOVED that idea. And, the rest is history!

Ingredients for homemade fajita seasoning:
Of course, the measurements for the ingredients is listed in the recipe card below, but let’s discuss the ingredients here for a better understanding.
- chili powder – this is the base of our seasoning, so choose a good quality chili powder, for the ultimate flavor.
- smoked paprika – smoky, sweet, and so delicious. Make sure you’re using smoked paprika, rather than regular, for that hint of smoky depth.
- onion powder – for a hint of onion-y goodness.
- garlic powder – for a hint of garlicky goodness.
- cumin – for a another depth of smokiness that’s not spicy.
- dried oregano – for a hint of herby goodness that’s common in Mexican cooking.
- cayenne pepper – optional, of course, but it adds a nice heat.
- red pepper flakes – again, optional, but this also adds a nice heat. You can adjust both of the heat based spices to your preference, or omit them completely. The level of spice with both of them is rather mild.
- kosher salt – just the right amount to season everything to perfection.
That’s all there is to it with this fajita seasoning.
So easy to make, but having it ready to go makes all the difference when getting dinner on the table quickly. Especially, on the weeknights.
This homemade fajita seasoning is ideal for anyone who buys their spices in bulk, as it does use large quantities because the fajita recipe calls for a large amount of seasoning, which is what makes them so good!
How long will the homemade fajita seasoning last?
6 months when stored in an air-tight container, or jar in the pantry.
At least 1 year when stored in the freezer.
It’s not that the spices go bad, but the do lose their potency over time leaving you with a bland seasoning mix.
Storing spices in the freezer helps to keep them fresher for much longer. So, it just depends on how quickly you will use the fajita seasoning up.
We make fajitas frequently, so we have no issues storing our seasoning mix in the pantry.
How to use the homemade fajita seasoning mix:
You can use them on any fajita recipe you like. I personally recommend my sheet pan chicken fajitas. Or, my sheet pan shrimp fajitas
You can use this seasoning mix on chicken fajitas, shrimp fajitas, seafood fajitas, steak fajitas, tofu fajitas, or veggie fajitas. Seriously, it will work with any kind of fajitas you’re making.
Generally for fajitas that makes 4 to 6 servings, I like to use 3 to 4 tablespoons of the seasoning mix. But, you can easily scale that up or down depending on how much fajita filling you have.
I do recommend labeling the fajita seasoning with the portion to be used so you don’t have to guess.
If cooking your fajitas in a skillet: add the fajita seasoning 1 to 2 minutes before you’re done cooking, just to toast the spices.
If cooking fajitas on a sheet pan: You can toss the fajita filling with the spice mixture on the sheet pan, before cooking.
Why make your own fajita seasoning mix?
Better flavor, and ultimately it’s usually cheaper than those little spice packets.
Plus, you can adjust the spices to your taste preferences.

Fajita seasoning recipe, in bulk. Have it ready anytime you want fajitas. It’s easy to make, and lasts a long time. Perfect with any type of fajitas. I suggest trying it with my sheet pan chicken fajitas.
Ingredients
- 4 tablespoons chili powder
- 3 tablespoons smoked paprika
- 2 tablespoons onion powder
- 2 tablespoons garlic powder
- 2 tablespoons cumin
- 3 teaspoons dried oregano
- optional: 1 teaspoon to 1 3/4 teaspoon cayenne pepper
- optional: 1 teaspoon to 1 3/4 teaspoon red pepper flakes
- 3 tablespoons kosher salt
Instructions
- Combine: Add all ingredients to a medium-sized mason jar, or mixing bowl. Shake, or stir to fully combine the spices. Pop the lid on the mason jar, or transfer to another type of air-tight container, and store at room temp for up to 6 months. If storing longer than 6 months, I recommend storing it in the freezer to help preserve the potency, and flavor of the spices. Tip: make sure to label the seasoning mix, along with the measurements.
- To use: To use the fajita seasoning, add 3 to 4 tablespoons of the fajita seasoning mix to your fajitas ingredients of choice. Note: this suggested amount of fajita mix should be used on a fajita recipe that has 4 to 5 servings. If making a larger, or smaller batch of fajitas, adjust the amount of seasoning you use, accordingly. If cooking the fajita ingredients in a skillet, add the fajita seasoning at the end of cooking, and allow it to cook another 1 to 2 minutes, just so the spices get nice and flavorful. If you’re making sheet pan fajitas, then, toss the fajita seasoning on the sheet pan with the fajita ingredients, along with 1 to 2 tablespoons of avocado oil, before roasting. Use this seasoning mixture on my sheet pan chicken fajitas.
Notes
Bulk seasonings: Yes, I know this seasoning mixture uses large amounts of seasonings. This is because we are making a bulk batch so that it’s ready to use anytime we want fajitas, and you need a lot of that fajita seasoning for one batch of fajitas. If you happen to buy your spices in bulk, this recipe is ideal for you.
Salt: I use kosher salt in this recipe, if you’re using a finer salt, such as table salt, make sure to use less table salt as it is finer in texture, and saltier in flavor. Also, I made this fajita seasoning so that when making fajitas I wouldn’t need to think about how much salt to add. For us, the fajitas are perfectly salted.
Portion size: The suggested amount of fajita mix should be used on a fajita recipe that has 4 to 5 servings. If making a larger, or smaller batch of fajitas, adjust the amount of seasoning you use, accordingly
Fajita recipes: You can use this fajita seasoning on any fajita recipe you like, or even a taco recipe, in a pinch – but, I highly recommend trying my sheet pan chicken fajitas recipe. It’s one of our all time favorite meals.
