Hi, Friends, it’s the end of the month again, this is the time when we review the recipes we made and the things we did. How did we get to the end of March so fast? I couldn’t be happier that spring is making its appearance. I can walk outside without the air hurting my face. I have even been able to wear my sandals on a few days!

What We Ate:
- Coconut White Russian
- Apple Cinnamon and Barley Pudding
- Healthy Shamrock Shake
- Irish Beef and Guinness Stew
- Blueberry Almond Energy Balls
- Spiced Carrot Muffins (GF)
- Asparagus Frittata
- Sweet Potato Salmon Melts
My favorites were the Coconut White Russian; it goes down way too smooth. The Irish Beef and Guinness Stew; it reminds me of my time in Ireland. And I couldn’t get enough of the Sweet Potato Salmon Melts!
What We Did:
We painted our bedroom for the second time – and there might even be a third time – ugh, picking out paint color can be so tricky. My vision is a light gray-blue color. Currently it is more of a light baby blue. Our room is small so I prefer subtle, light colors. Any color suggestions?
Paul and I celebrated St. Patrick’s day by making some Irish Coffee. I haven’t had one since I made them for the blog a year ago. I was just learning how to take a decent pour shot back then (no laughing aloud). We had to make about 4 or 5 Irish Coffees to get the right shot. Yes, we did drink all of them, they were delicious, and we didn’t complain. The adventurous life of a food blogger!
We spent Easter in Wisconsin with my parents and some good family friends. Good food, good company, fun times! What did you do for Easter? Leave a comment, I’d love to hear!
What To Expect:
With April comes more spring weather, flowers, and delicious produce – and the dreaded tax season! April recipes will take advantage of fresh spring produce, and they will be quick and easy so you still have time to file those taxes. Deep breath! Also, you can be very excited for some tasty Mexican-inspired recipes in anticipation for Cinco De Mayo! I’ll see you back here shortly for another recipe.
