June is one of the greatest months, don’t you think? It hosts our wedding anniversary, the first day of summer/the longest day of the year, and the feeling of summertime freedom – grilling, pool parties, long walks, lounging outside with a good book, iced tea, popsicles – does life get any better?
What We Ate:
June was a delicious month. Really is there ever a non-delicious month? Not in our house!

- One Pan Apricot Chicken
- Pineapple Ham and Quinoa Stir Fry
- Strawberry Rhubarb Compote
- Chocolate Mint Energy Balls (GF)
- Mango Black Bean Quinoa Salad (GF +V)
- Blackberry Sage Red Wine Sangria
- Gluten Free Chocolate Blackberry Sage Scones
Man, is it hard to pick a favorite recipe. I would have to say my favorites were the One Pan Apricot Chicken (because it was a wedding anniversary recipe) and Chocolate Mint Energy Balls (because I eat these almost every day and haven’t gotten sick of them!)
What We Did:
- We celebrated our 3 year wedding anniversary (crazy!)
- We bought a new bed and couch in the same day! Yay for no more back aches!
- Went to Colorado for a week to go on our annual rafting/camping/family trip! (pictures to come really soon, promise!)
- As you are reading this post we are relaxing by a lake in Minnesota! Yes, another vacation (living the life)! This time it’s with Paul’s side of the family!
Current Favorites:
Watch – Game of Thrones, so sad the season is over. This season was a good one, I mean edge-of-your-seat-good and I am sad to see it come to the season finale already. It went way too fast!
Also very excited to be watching Orange Is The New Black on Netflix! Thankfully I have been way too busy to binge-watch the season; I am only two episodes in. Something to look forward to!
Read – I finished The House By The Lake By Ella Carey while we were in Colorado. If you are into WWII stories that flash between present and past you will enjoy this book. It even has a hint of romance!
Drink – Coconut water, my favorite way to rehydrate after a sweaty run.
Eat – Kind bars. Things have been a little hectic around here with buying new furniture, packing for a trip, unpacking and then packing shortly after. I haven’t had time to make a batch of my Chocolate Mint Energy Balls, so I have found Kind nut bars to be a good alternative for my pre-workout snack in the morning. They are high in protein, are gluten and soy free, only have 6 grams of sugar, and all the flavors I have tried so far are tasty. They have also become my new go-to travel snack!
Listen – The Lively Show Podcast – I have been listening to Jess Lively’s podcast for at least a year and I look forward to her new episodes every Thursday. She usually interviews a guest and they discuss life values and struggles and goals. They’re inspiring and uplifting. Right now Jess is traveling around Europe and recording her experiences on her Podcast. It’s so fun to hear about her adventures!
What to Expect:
In July (my birthday month!) you can expect cool, refreshing recipes that require little to no heat to cook. I know I said this last month, but I really mean it. No scones baked at 400 degrees Fahrenheit!
