No, it can’t be September already! Summer just started! That’s pretty much how I feel every time September rolls around. I have this feeling of desperately wanting to hold on tight to everything that is summer and immediately do it all over again: the long, sunshine-filled days, the beach and lake vacations. At the same time I am very much looking forward to the sense of coziness that fall will bring. Its crisp cool weather will be a relief from the heavy, humid days of August. I will be able to turn my oven on again to bake comforting, cinnamon spiced goodies! But before we embrace baking season let’s reflect on what we ate during August, shall we?
What We Ate:
- Smoky Sun Dried Tomato Hummus
- Pineapple Mojitos
- Green Lime Smoothie Bowl
- Easy Caesar Salad (GF)
- Fish Tacos with Cucumber Mango Pico De Gallo and Cilantro Sauce
- Golden Milk Frozen Yogurt Bark
- Fresh Moscow Mules
- Marinated 3 Bean Salad
So many tasty and fresh foods during the month of August. My favorites were the Golden Milk Frozen Yogurt Bark and the Easy Caesar Salad!
What We Did:
- In addition to all of the tasty recipes above, I wrote How to Eat Healthy on a Road Trip, based on our 18 hour (one way) road trip to South Carolina in July.
- Things began to slow down. After being gone for 4 weekends in a row in July, it was a nice change of pace to relax at home.
Current Favorites:
Watch: Stranger Things on Netflix. Have you guys seen it?! It’s addicting. It’s like 80’s horror meets Sandlot. I know that sounds cheesy, but it’s seriously a must watch!
Read: I finished reading the second book in the Lunar Chronicles series, Scarlet. These books are young adult fantasy, but they are a fun easy read. I recommend them if you like a modern twist on fairy tales. This one is about Little Red Riding Hood.
Listen: The Chris Loves Julia Podcast. A friend recommended this podcast to me and I have been hooked ever since. It’s a podcast about home design and DIY! Also check out their blog.
Drink: Tazo Iced Passion Tea. It’s an herbal non-caffeine hibiscus tea. It’s colorful, bright, tart, and refreshing. I can’t get enough!
Eat: I have been trying to consume as many fresh summertime fruits and veggies as possible! That is all!
What’s Happening in September:
Expect simple, healthy meals that utilize late summer produce, along with a few baked breakfast/snack items toward the end of the month. I am looking forward to turning on my oven again!!!
