Hi, and welcome to October, 2016! I hope that this post finds you all snuggled up with a warm blanket and a hot cup of tea. BTW how is it the 10th month of the year already? I mean, it feels like it was only yesterday that I started writing these end-of-month recap posts. My very first one was in December 2015! Let’s take a moment to slow down just a little and reflect on the month of September. First the food:
What We Ate:
- Easy Gazpacho
- Grilled Corn with Spicy Chipotle Sauce
- Grilled Peach and Zucchini Summer Bowls
- Gluten Free Gyro Bowls
- Gluten Free Chocolate Cherry Dessert Bars
- Mexican Crock Pot Breakfast Casserole (GF)
- Pesto Hummus
- Crunchy Chocolate Hazelnut Granola
- Fall Kale Salad with Roasted Delicata Squash
My favorites were the Gluten Free Gyro Bowls, Fall Kale Salad with Roasted Delicata Squash and the Gluten Free Chocolate Cherry Dessert Bars (duh, I always have to go with chocolate!) What was your favorite recipe?
What We Did:
I also wrote about my girls’ weekend in Minneapolis and how important it is to go on getaways with friends, family, cousins, siblings, your dog, cat, whomever!
I wrote my very first guest post, Pumpkin Spiced Frozen Yogurt Bark, on my friend Cait’s blog, Cait’s Cozy Corner. Check it out!
September was fun, but busy. We kicked off the weekend by participating in the Dragon boat race in Dubuque, Iowa, on the Mississippi river. This is the third year that we have done it and we have a blast every time! If you’re not familiar with dragon boat racing it’s these huge boats that, yes, look like dragons. They seat 20 people who have to row in sinc. There is a sterns man who steers the boat, a drummer who keeps the time for the paddlers, and the flag catcher who has to lean out on the dragon’s head to catch the flag at the end of the race. Guys, it’s so much fun! Oh, our team name is Aquaholics – LOVE!
Current Favorites:
Drink: Cranberry Apple Zinger tea by Celestial Seasonings. It’s tart and sweet with a hint of cinnamon. It’s pretty much fall in a mug!
Eat: I made a huge batch of my spin on my Grandma’s Chili earlier this week and it has gloriously lasted us all week long! As a food blogger I don’t usually get a chance to remake recipes more than twice (test the recipe and then make it for the blog). But my spin on my Grandma’s Chili with red kidney beans, ground beef, celery, green pepper, all simmered in a tomato-y liquid until thick is a recipe that I always make time for every fall. It is by far my favorite chili, probably because it brings up cozy childhood memories. Plus, did I mention that it makes a huge batch and freezes nicely!? What more can you ask for from fall food?!
Apple Pie Oats by Dani Spies at Clean and Delicious. First of all, if you don’t already know of Dani Spies’ You Tube channel, check it out! She has a ton of healthy recipes and nutrition info! As I was saying her recipe for Apple Pie Oats has become an addition to my morning eggs. It’s perfect for chilly mornings and tastes like an apple pie!
Read: Pinch of Yum. I have been following Pinch of Yum for a few years, but recently I have been really loving the way Lindsay is focused in on all the positives of fall! Plus she has some yummy recipes!
What to Expect:
During September I was holding on to every last bit of that end-of-summer weather and food. But in October I am really turning on my oven, embracing the spiced pumpkin goodies and making soul-warming, comforting recipes! Stay tuned.
Also, I plan to do a lot of cuddling with this cute little guy!
