This weekend is our one year wedding anniversary! Paul and I seriously don’t know where this first year has gone! It feels like we got married just yesterday; I suppose that’s a good thing.
Paul and I got married at a gorgeous little winery in Iowa set among rolling hills. The ceremony and reception were both outside on a sunny 75 degree day. It really was perfect!
To celebrate our anniversary I wanted to make one of our favorite foods we served at our wedding: bacon-wrapped dates. They were served during the cocktail hour and they went like hotcakes. They were so good that I decided two months ago to make them for this special weekend!
The bacon-wrapped dates that were served at our wedding were outstanding. The crunchy, salty bacon melded with the sticky sweet dates. Since I have been dreaming of making these bacon-wrapped dates for two months, I wanted to put a little twist on them. I decided to stuff half of them with goat cheese and leave half of them unstuffed for the sake of tradition.
The ones with goat cheese added a rich tangy flavor that was pleasantly welcomed. I have to admit that I can’t pick a favorite between the two. I guess I’ll have to make both every time. Darn!
These little gems are the perfect appetizer for your next party. I would recommend doubling the recipe because they will be gone before you know it!

Description
Bacon-wrapped dates are the best appetizer. They are salty and savory, sweet and sticky all at once, they are addicting!
Ingredients
- 24 pitted medjool dates*
- 1/2 3 ounce package goat cheese
- 12 strips bacon
Instructions
- Preheat the oven to 375 degrees. Prepare a rimmed baking sheet by lining it with a cooling rack so that the bacon grease can drip onto the pan.
- Slit the dates lengthwise. Stuff them with the goat cheese and push closed.**
- Slice the bacon in half lengthwise. Wrap the bacon around the dates and secure with toothpicks.
- Cook for 15 to 20 minutes or until the bacon is crispy. Make sure to turn the dates halfway through the cooking process. Serve warm or at room temperature.
Notes
* If you can’t find pitted dates then remove the pit by slicing the date lengthwise and carefully prying the pit out of the meat of the date.
** I stuffed half of my dates with goat cheese and kept the other half unstuffed. I loved both versions, it is fun to have a mixture
