It’s February 1st 2017 – in case you forgot the date 😉
At the end of each month I look back and review all of the recipes I shared and anything interesting that I am into for the month. It’s great to take time to reflect and honor the accomplishments we have achieved – give a high five to all that we got done the month before! It’s a practice I enjoy and helps me to move into the next month with a fresh start.
Let’s get into it!
What We Made:
- Cauliflower Fried Rice with Shrimp
- Slow Cooker Shredded Beef Sauce with Creamy Polenta
- Savory Curried Oatmeal with Veggies and Fried Egg
- Healthy Vegan Hot chocolate
- Asian Citrus Salad with Marinated Salmon
- Slow Cooker Butternut Squash Soup
- Gluten Free Tuna Noodle Casserole with Turnip Noodles (DF)
- Vegan Chai Tea Spiced Chia Pudding
My faves were the Savory Curried Oatmeal with Veggies and Fried Egg and the Asian Citrus Salad with Marinated Salmon. OKAY and the Gluten Free Tuna Noodle Casserole with Turnip Noodles – because nostalgia! January was focused on veggie packed healthy foods to balance out all of the Christmas desserts – I loved every single veggie filled minute! What are your favorites?!
Currently Into:
Read: Wild: From Lost to Found on the Pacific Crest Trail by Cheryl Strayed. If you enjoy a good story about nature and life transformation this one is for you. In case you were wondering, the books is way better than the movie -big surprise. I am currently reading Cress. I am enjoying the Lunar Chronicles by Marissa Meyer, a fun twist on fairy tale characters in the future with satellites and spaceships and cyborgs.
Watch: The first day of January I came down with a real nasty cold. I ended up Netflix binge watching Call the Midwife. It takes place in a suburb in London during the  late 50’s and early 60’s. It follows the work of midwives/nurses who who serve the community. It’s sometimes heavy and provokes all of the feelings. But it’s interesting to learn of a different time and lifestyle. Although, I have to say that because I was watching it so much while I had a cold I pretty much thought I was dying from all of the illnesses on the show!
Listen: Chris Loves Julia Podcast. Chris Loves Julia is a home design blog that a friend introduced to me. I have been enjoying their podcast. It gives great decorating and DIY tips that we have found useful for updating our own house.
Thanks for tuning in! I will see you back here on Friday for another yummy recipe! 🙂
