If you’ve been following the blog for a while you know that each summer I tell you my woes of how insanely hot our kitchen gets in the summer time. Our circa 1910 house doesn’t have central air – yes we have window a/c units but the cold air never quite reaches my little cave of a kitchen. Point is that I pretty much never turn on my oven during June through August if I can help it. I’m guessing I’m not the only person who prefers to keep their oven off during that time. Anyone else have a sauna kitchen?!
Thus the creation of this recipe round up: 10 spring recipes to make before it gets to0 hot!!! I just hope I’m not too late lol. Because it seems that we’ve almost just skipped spring and gone straight to summer. Still, we haven’t needed to turn on the a/c window units yet so I think we’re still good to make turn the heat up in the kitchen.
I’ve included a mix of light entrees, healthy breakfasts, desserts, and baked goods that make use of spring’s lovely produce. If anything I think you should bake something otherwise it will be another 3 to 4-ish months before you do again, now is the time!
Oh yes, and all of these recipes are gluten free…but anyone can make them because I promise you won’t be able to tell the difference!

1) sheet pan pineapple shrimp fajitas with avocado crema
A tropical fajita with shrimp, roasted sweet bell peppers, roasted pineapple, and roasted jalapenos all topped with avocado crema! These fajitas are meant to be made at this very moment in our spring season because they make you feel all the summer-y vies but they do require the oven. Best part though, they are super easy to make and are all made on one large sheet pan – well and you need a food processor for the avocado crema…but come on one more dish is worth it for avocado crema!

2) 30 minute plantain breakfast hash with runny eggs
Who knew plantains would be good in a breakfast hash?! I didn’t until I needed to use up some that were getting extra ripe…breakfast hash will never be the same! Starchy, sweet and perfectly tender bites of plantains cooked in smoky paprika + kale and red bell pepper for more veggies and those runny eggs baked right on top! Sunday morning breakfast, we’re ready for you!!!

3) grain free lemon poppy seed muffins
I love these muffins so much. They are tender, tart and sweet and topped with a cashew lemon glaze/frosting situation that you will want to eat with a spoon!!! Beautiful sunny lemon poppy seed muffins are meant for bright spring mornings! Breakfast, snack, or healthy treat these muffins are LIFE!

4) thin and crispy chocolate cookies
An oldy but a goody. These thin and crispy chocolate cookies use simple ingredients and are easy to make, the batter comes together in a food processor….thanks for the machine power! The only effort required is to roll out the dough so that you get a nice thin cookie and to use a cookie cutter for perfectly round cookies. I once attempted to make these babies while my kitchen was at it’s sauna point and the dough melted and it was a challenging experience. Learn from me, go make these crispy, chocolate-y decadent cookies real soon!

5) zucchini blackberry cornbread
Cornbread + juicy blackberries + zucchini for tenderness and hidden veggies…need I say more?! I may go so far as to say this cornbread is my fave cornbread of my life – thank you blackberries! Umm also I think blueberries would be an awesome option too. Again this is one of those recipes that can be enjoyed for breakfast, as a side, as a snack, or even a healthy dessert – options!

6) 30 minute healthy matcha granola
Homemade granola has become one of my all time favorite things to make – it’s insanely easy yet totally impressive. Plus you get to control the amount of sugar/what kind goes into your granola and that is half of the reason I like to cook. This matcha granola is sweet, crunchy, with perfect notes of grassy matcha flavor. Eat it plain, with milk, or over yogurt – so yum!

7) curried cauliflower tacos with crispy tofu & curry sauce
This one is for all my curry lovers out there! Roasted curried cauliflower, crispy tofu, tangy quick pickled red onion, and a delectable curry sauce all in a taco – heaven! This vegan dish is super satisfying and filling. WHO WANTS TACOS?!!

8) blueberry banana bread
Hello my love! Sweet, tender banana bread studded with juicy blueberries! YES, this must be made!!! Trust me, this blueberry banana bread is perfect for breakfast, snacking, or dessert. Again with he multi-purpose recipes…you’re welcome!
9) 35 minute pizza stuffed peppers
Who doesn’t love pizza night?! These pizza stuffed pepeprs are a fun and healthy alternitive. They are filled with quinoa that’s mixed with pizza sauce for the crust vibes. From there you can top it with any of your fave pizza fixings. Pizza in stuffed inside a tender bell pepper, so fun!

10) easy eggplant lasagna roll ups
Eggplant lasagna roll ups are for those moments when you want lasagna but you don’t want to assemble all of the layers and you want something a little lighter. Tender roasted eggplant slices are stuffed with ricotta cheese and topped with plenty of marinara sauce. Add a glass of red wine, and my friends, you’ve got a date night…or a girls night….or a whatever special night you want it to be! All that matters is that you have fun!
