Here we are at the end of April with another month in the books. How does time go by so fast?
These monthly recap posts are sneaky. I am so focused on testing new recipes, taking photos, editing photos, writing posts, trying to stay ahead – that I almost forget about this post that I write at the end of each month. Truth time: at the end of the month, I have these moments where I think: “Oh, I have to write the monthly recap post? Wait, it’s the end of the month already?! How did that happen? When am I going to fit this post into my already busy schedule?!? *begins to get a little stressed* Relax, you can do this; it’s only once a month. Besides, what did I even make in April?” Once I look back and write down each recipe I made for the month I am reminded why I decided to start writing these monthly recap posts in the first place.
It’s nice to have a reason to slow down, to not always be looking into the future, planning. It’s good to take some time to reflect, to relish our accomplishments. Then, I am thankful that I get a chance to look back at how great that month was. Plus, these monthly recap posts are a great way for you, my friends, to catch up, to review on all the delicious things that I shared with you.
And let me tell you, April was a tasty one!
What We Ate:

My favorites: One Pan Lemon Chicken, one of my new go-to weeknight meals. Dark Chocolate Brownies, because Robust Recipes turned two years old! And the Skinny Orange Lime Margarita, summertime perfection in a glass.
What We’re Into:
Watch: Game of Thrones! Do you watch it?!?! Do ya?! Don’t worry, there are no spoilers, I’m not mean! Game of Thrones is the only current show that Paul and I both go nuts over. Yes, we do have a few other shows we watch on Netflix together, but Game of Thrones is more of an event. We both talk about the episode we just watched for days afterwards. We even got a subscription to HBO Go, which is a big deal because we haven’t subscribed to anything except Netflix since we got married. Seriously, let me know if you are a GOT fan in the comments below. So exciting!
Read: I recently read the book Cinder by Marissa Meyer. It’s a twist on the classic Cinderella story. It takes place in the future. There are cyborgs and magical things. If you’re into fantasy, you will enjoy this one. I can’t wait to dig into the next books in the Lunar Chronicles Series.
Eats: Endangered Species Chocolate. We have been loving this chocolate. It’s a little pricier than your average bar of chocolate, but it is gluten free and vegan. This chocolate truly is dark chocolate. Bars range from 60% cocoa, 72% to 88% cocoa. IMO that’s the best kind of dark chocolate. Since the chocolate is so rich in flavor a little goes a long way. I feel satisfied from eating only one or two squares at a time. What I love about the Endangered Species Chocolate is that 10% of their net profits get donated to support at-risk species. Each chocolate bar flavor features a different animal. Their picture is on the front of the chocolate bar and inside the wrapper is some information about that species. Tastes great and feels great! I find these bars in the organic section of my local grocery store. My favorite flavors are Dark Chocolate with Blackberry Sage, and Dark Chocolate with Cinnamon, Cayenne & Cherries. Be warned, the cinnamon, cayenne & cherries chocolate bar has a kick to it.
