Super Easy Asian Marinade

December 18, 2017 By Emily

Are you ready for a super easy Asian marinade to flavor all your your steaks, and fish and pork, and maybe chicken?! I say maybe chicken, because when I tested this recipe with chicken breasts the marinade charred onto the chicken because it needed to cook for so long. BUT I imagine that it would do great on chicken that is first cut into bite sized pieces, or pounded to be a thinner cut of meat...BTW I don't really love pounding chicken, or any meat for that matter, it's kind of scary and kind … [Read more...]

Healthier Broccoli Cauliflower Cheese Soup (+ Vegan Option)

October 27, 2017 By Emily

What comes to mind when you think of broccoli cheese soup? Comfort food, delicious, rich, indulgent, cheesy, creamy, delicious. Yes, me too! The last thing that comes to mind when we think of broccoli cheese soup, is healthy. I mean yes there is broccoli in there, so there is some veggies with nutritional value in it. BUT let's be honest, broccoli cheese soup is just an excuse to eat watered down cheese dip. I know, the truth hurts sometimes. Don't get me wrong I LOVE broccoli cheese … [Read more...]

First soup of the season! HEY FALL, I am officially ready for you now! I have my cozy bowl of hot soup to keep me warm during a chilly 50 degree day! But of course, we've had gorgeous September weather lately. Highs of  75 to 80 degrees. I finally decide to embrace fall and our September turns out to be warmer than our August was. So backwards. Really, I'm not complaining - I will enjoy end of summer weather for as long as it decides to grace me with it's presence. I love you … [Read more...]

Mango Coconut Curry Chicken with Rice Noodles

September 18, 2017 By Emily

It's that time of year when I trade my salads and no-heat-meals in for comforting, warming foods. This mango coconut curry chicken is my way of dipping my toes into the season of fall foods. It doesn't require the oven so it doesn't heat up the entire house. Yet it's warm and got all of those comforting curry spices in that sauce. I can't dive in head first to fall quite yet, I'm not exactly ready for all the pumpkin baked goods - there is time for that - but I am starting to crave heartier … [Read more...]
