We are fortunate enough to have this little apple orchard not too far from us. Every fall since we have moved to the area I have enjoyed going to the apple orchard to stock up on apples for a few weeks. I seem to have a problem of buying way too many apples when I go to the orchard. All of the apples look so beautiful, fresh, and juicy that I get really excited. I find it hard to stop loading up my bag. I keep wanting more apples. Before I know it, I have purchased 6 pounds of apples when I … [Read more...]
Pumpkin Pie Ice Cream (V)
The leaves are starting to turn pretty colors, days are shorter, and the air is crisp. This can only mean one thing. It’s officially pumpkin season! Okay, maybe it means that fall weather is on its way, but mostly it means pumpkin goodness! With cooler weather approaching, the idea of ice cream seems almost silly (ah, who am I kidding, ice cream is good even in 30 below freezing temperatures!), but a good pumpkin pie ice cream is perfect for Indian summer weather. Let’s embrace fall with a … [Read more...]
Gluten Free Jalapeno Cornbread Muffins
CORNBREAD MUFFINS!!! Yes, I am so excited about this recipe that I had to type it in all caps! If there is anyone out there who doesn’t like cornbread, especially in muffin form, and especially slathered with butter and honey, then I’m sorry but we can’t be friends anymore. KIDDING! But not really. In my very humble opinion corn bread should be fine in texture; use the fine ground corn flour. Cornbread should be tender; you don’t want it so dry that it gets stuck in your throat as you’re … [Read more...]
Carrot Cake Granola Bars
Raise your hand if you love carrot cake! Next to chocolate cake, carrot cake is one of my favorites. What’s not to love: little bits of carrots baked into fluffy cake that is spiced with cinnamon, nutmeg, ginger, and cloves. Sometimes the cake is studded with raisins or walnuts. Everything is topped with a thick and creamy, slightly sweetened cheesecake frosting. You totally want some carrot cake now, don’t ya? Sorry to burst your bubble but I have no carrot cake to offer you … [Read more...]
Chocolate Raspberry Swirl Ice Cream Sandwiches (V + GF)
If you still have some Raspberry Swirl Chocolate Chip Ice Cream left after an entire week, you’re pretty amazing and I’m proud of you! I literally had to hide mine in the back of the freezer behind the uncooked chicken and the frozen fruit in order to deter myself and to make Paul forget that it exists. Since we exercised so much restraint I think we deserve a little treat as a reward, don’t you? Chocolate Raspberry Swirl Ice Cream Sandwiches. They combine the ice cream recipe from last week … [Read more...]
Thin and Crispy Chocolate Cookies (GF)
Most of the time when I think of a perfect cookie, it is soft in the middle and slightly crispy on the outside. Then there are times when I enjoy a thinner, very crispy cookie. What I dig about thin and crispy cookies is that because they are thin they are not as filling. So, you can stuff a few more thin cookies without feeling the guilt and the full belly that you would feel with regular cookies. You pick up what I’m putting down here? Raise your hand if you agree that … [Read more...]
Raspberry Swirl Chocolate Chip Ice Cream (V)
Ice cream + raspberries + a little chocolate = the ultimate dessert! Look, look! A math equation that I actually understand! You didn’t think I would let summer pass by without at least one more ice cream recipe, did you? When I was brainstorming flavor ideas for an ice cream recipe, I knew I wanted it to be a little fruity with a hint of chocolate (duh). Raspberry is one of my all-time favorite summer fruits. Just like that, Raspberry Swirl Chocolate Chip Ice Cream was born! Let’s discuss … [Read more...]
Chai Spiced Raw Energy Balls
Since the start of spring I have been consistently running 2 to 3 times a week in the mornings. Being this consistent with running is a very big deal to me. Up until this summer I have absolutely despised running! I mean, I really, really HATED running! The only reason I ever ran was because someone else told me I had to, such as my gym teacher in school, or my swim coach in high school. Then it was the workout I would do when I didn’t have access to a pool. Running always felt so … [Read more...]
Vegan Tarragon Merlot Truffles
By now it is no secret that I am a chocoholic. Don’t believe me? Just look at all these chocolate recipes. As you probably know by now, if I can find a way to make chocolate desserts healthier and still taste delicious, I am all over it. A chocolate truffle that melts in your mouth is one of the most coveted desserts. They are so rich and decadent, who can resist them? As mouthwatering as truffles are, heavy cream and refined sugar aren’t exactly healthy. These vegan tarragon and … [Read more...]
Vegan Coconut Crunch Ice Cream
It’s no secret that ice cream is the ultimate dessert to enjoy on a hot summer day. When I was a kid, and through high school, my parents and I would travel to Sanibel Island, Florida every spring break to meet up with my dad’s family. It was a vacation that I looked forward to every year. I enjoyed the long, hot days of swimming in the pool and lounging on the beach while temperatures in Wisconsin were fluctuating between winter and early spring. One of my favorite things to do while I … [Read more...]
