Happy St. Patrick's Day, tomorrow!!!!! If you don't know by now, I am in LOVE with St. Patrick's day....and, with anything Irish. I studied abroad in Dublin, Ireland for a semester, during college. It was a wonderful experience! Today, I share with you a recipe for easy Irish coffee, just in time for you to make tomorrow (or, over the weekend)!!! You're welcome! If you've never had an Irish coffee before, it's a true treat. Hot coffee is spiked with whiskey, slightly sweetened, … [Read more...]
Salmon Rice Bowl (30 Minutes)
Who else likes a good sushi moment?! This salmon rice bowl IS NOT SUSHI, but for me, it has those deconstructed sushi vibes to it. A similar idea to my smoked salmon sushi bowls - LOVE that recipe too! This salmon rice bowl is essentially cooked salmon and rice, combined with a spicy mayo sauce. The fun part is in the toppings. You use nori sheets, or those little seaweed snack packets (my fave), and add some of the salmon mixture to the seaweed, top it with a slice of avocado, and a few … [Read more...]
Healthy Chocolate Freezer Fudge (Vegan)
Rich, smooth, squares of fudge bursting with dark chocolate-y goodness. That's what we have going on here today, my friends. Count. Me. In! This chocolate freezer fudge is silky smooth, and melts on your tongue. It is rich - as fudge should be - but not overly so. It has a nice dark chocolate flavor that has the teeniest hint of coconut in the background. It's not cloyingly sweet, like traditional fudge recipes tend to be. Just the right balance of sweet-to-chocolate ratio. This … [Read more...]
Easy Cranberry Relish
A few years ago I shared a recipe for my favorite cranberry sauce that my Aunt has made for years! It's a Thanksgiving, or Christmas side dish I look forward to all year round, it's so good! But, my Mom made this tasty cranberry relish for our immediate family for years as well. It's so dang easy that I often got the job of making it as a kid. This cranberry relish is a fun alternative to a more traditional cranberry sauce. It's fresh, bright, tart, and sweet, and super crunchy. It's also … [Read more...]
Healthy Spinach Artichoke Dip
Show me a person who doesn't go nuts for a good spinach artichoke dip as an appetizer?! No one, ever. I mean, hello creamy sauce, and loads of cheese! Grab some chips, some toasty bread, or some celery, and dig in with friends. I have many memories of ordering a spinach artichoke dip at various restaurants, with friends and family. Everyone sharing the dip was infatuated with just how good it was. Creating a recipe for spinach artichoke dip has been on my list for … [Read more...]
Chicken Caesar Salad
Hi, remember, how I shared a recipe for healthy Caesar dressing a little while back? Well, I am FINALLY sharing a chicken Caesar salad to go with that Caesar dressing. Crisp, crunchy lettuce tossed in a flavorful, creamy Caesar dressing. The croutons are crunchy, and garlicky, the chicken is juicy and has a nice seared crust due to the garlic powder. And, of course, an extra sprinkle of fresh parmesan cheese. Who else LOVES to order a good Caesar salad at a restaurant?! What if you … [Read more...]
Sheet Pan Chicken Fajitas (30 Minutes)

I will make, and eat this recipe any day of the week. TYVM!!!! Many of the recipes I share on the blog I don't always get a chance to re-visit in my everyday life. It's not because I didn't enjoy them, or love them deeply. It's simply because I am always cooking the next, newest, recipe for my blog. I … [Read more...]
Microwave Paper Bag Popcorn (No Oil)
What's the ultimate snack time snack?! POPCORN!!!! For me, at least, it has always been a nice buttery, salty bowl of popcorn. I never really have craved a bag of potato chips, or Cheetos in my adulthood, but a bowl of popcorn? Yes please! Growing up, my parents and I had a lot of movie nights. And more often then not, my dad would microwave a bag of popcorn. Such a fun treat for movie night. I bet my dad is going to love this recipe. It's microwave paper bag popcorn - and it's his … [Read more...]

Remember that healthy Caesar dressing that I shared last week?! I bet you thought I was going to make a classic Caesar salad this week, right?! Wrong! Although, I did eventually make a classic chicken Caesar salad...I couldn't get the idea of a Caesar pasta salad out of my head. It's essentially a Caesar salad with some pasta thrown in there. What's not to love about that?! We've got my healthy Caesar dressing, made with Greek yogurt - it's uber creamy, bold in flavor, … [Read more...]
Healthy Caesar Dressing (with Greek Yogurt)
You all probably know by now how much I enjoy a good salad. And, you probably know how much I love using plain, fat free Greek yogurt in sauces, dressings, and dips, in place of other similar creamy things. One, that I know you guys love is my healthy Greek yogurt dill dip. It's one of my favorites too. We make it all the time! The great thing about using fat free Greek yogurt in dips and dressings is that it can replace another creamy fat such as mayonnaise, sour cream, or even egg yolks, … [Read more...]
