Who is ready for a refreshing Greek pasta salad on a hot summer day?!?! You all love my Italian pasta salad with salami that I shared last summer, so I couldn't resist making another pasta salad. And, I have to say, I might have a new favorite!!! This Greek pasta salad is vibrant, healthy, and is packed with Greek inspired veggies: red onion that gets pickled in the vinaigrette, kalamata olives, cucumbers, bell pepper, artichoke hearts, and grape tomatoes. Plus, you've got the pillow-y … [Read more...]
Greek Chickpea Salad with Shrimp
It's officially summer, and nothing says summer, more than a big fat salad that's served chilled. It's Greek chickpea salad time, my friends!!! Much like my Italian pasta salad with salami, this Greek chickpea salad is packed with veggies, can be made in advance, and is super easy to make. You've got the tender, meaty chickpeas along with the crunchy cucumbers, some artichoke hearts, crunchy red onion, black olives, and kalamata olives, juicy grape tomatoes, plenty of feta cheese for tang, … [Read more...]
Sheet Pan Shrimp Fajitas (30 Minutes)
With tomorrow being Cinco de Mayo, what better way to celebrate than with some FAJITAS?!?! Shrimp fajitas, to be exact. All made one one, single sheet pan, in the oven! If you saw last week's post for homemade fajita seasoning, you already knew that some sort of fajitas recipe was coming this week. We LOVE fajitas so much in this house, that it only made sense to make my favorite fajita seasoning in bulk form so that we are one step closer to Mexican fajita vibes...even on … [Read more...]
Salmon Rice Bowl (30 Minutes)
Who else likes a good sushi moment?! This salmon rice bowl IS NOT SUSHI, but for me, it has those deconstructed sushi vibes to it. A similar idea to my smoked salmon sushi bowls - LOVE that recipe too! This salmon rice bowl is essentially cooked salmon and rice, combined with a spicy mayo sauce. The fun part is in the toppings. You use nori sheets, or those little seaweed snack packets (my fave), and add some of the salmon mixture to the seaweed, top it with a slice of avocado, and a few … [Read more...]
Shrimp Tacos with Jalapeno Sauce
Hello shrimp tacos!!! End of summer tacos that features bright green jalapeno sauce, avocado mash, jalapeno cilantro slaw, plump shrimp, and crunchy sweet corn. Yes, please. I will have these for dinner every single night until it's fall. TYVM! Remember that easy jalapeno sauce I made back in May, for Cinco de Mayo? Well, that sauce inspired me to make these shrimp tacos! There are so many good uses for that jalapeno sauce, but I couldn't get shrimp tacos out of my … [Read more...]

Lemon dill salmon with asparagus only takes 20 minutes to make, and only requires one pan!!! It can't get much easier then that! The other best part is that this is a complete meal. It provides a healthy protein with healthy fats, and a super healthy vegetable form the … [Read more...]

We all need more quick and easy weeknight meals that requires little cleanup. One that's healthy, filling, and delicious - right? This maple glazed salmon fits all of the bills. It only requires one large sheet pan, and a small sauce pot. It takes 35 minutes to make, and it's pretty darn tasty. Perfectly roasted, crunchy, brussels sprouts go so nicely with the tender, flaky salmon. And the salmon, oh man, it's baked with this thick, glossy maple glaze that ties everything … [Read more...]
Summer Pesto Pasta with Shrimp
One of the greatest foods to enjoy during the summer is fresh garden herbs. We keep a variety of herbs in our garden each summer, it's a great way to save money since buying fresh herbs in a grocery store are pricey, especially for the small amount that you get. Herbs are an easy and healthy way to add so much flavor to so many dishes. I am no garden expert, however we have learned a lot about gardening in the past couple of years. If you only have space, or time, to garden one thing I … [Read more...]

We are using our resources and making what we already have on hand work. And that's exactly what I am here to help you do with this anything you have … [Read more...]
