This past week I was on my family vacation, in South Carolina. Actually, as you are reading this, I am on my way home right now. By now I have officially enjoyed the lifestyle of a beach bum for a week. Growing up I hated salmon. My mom would always try to get me to eat it by dousing it in rich buttery sauces, and this would only sometimes work. Ever since I planted my herbs three weeks ago, I have been itching to make something with them. A 4- herb pesto spooned over salmon was the ticket.
