Description

Chai Spiced Raw Energy balls are filled with plenty of chai spice with a hint of chocolate. They are packed with healthy fats and complex carbs. They are perfect for a workout snack.


Ingredients

  • FOR THE CHAI SPICE MIXTURE:
  • (Make this in the quantity you desire and keep on hand for spicing tea or for other recipes; you will only use 2 teaspoons of the mixture for this recipe).
  • 4 parts ground cinnamon
  • 2 parts ground ginger
  • 2 parts freshly ground cardamom (Freshly ground is best, but pre-ground works too).
  • 1 part ground cloves
  • 1 part ground coriander
  • 1 part finely ground black pepper
  • FOR THE ENERGY BALLS:
  • 1/2 cup flaxseed meal
  • 2/3 cup shredded coconut
  • 1 tablespoon chia seeds (optional)
  • 1 cup steel cut oats (Use gluten-free certified for gluten-free eaters)
  • 1/2 cup mini chocolate chips or cacao nibs
  • 2 teaspoons chai spice mixture
  • 1/2 cup cashew butter (or sub in peanut butter)*
  • 1 teaspoon pure vanilla extract
  • 1/3 cup honey or agave nectar


Instructions

  1. In a large bowl mix together the flaxseed, shredded coconut, chia seeds, oats, chocolate chips, and spice mixture. Add the cashew butter, honey and vanilla. Stir until well combined (this may take a little bit of elbow grease).
  2. Cover the bowl and place it in the freezer for 20 minutes. Don’t skip this step; it helps to prevent your hands from getting sticky when forming the balls.
  3. Prepare a cookie sheet lined with parchment paper or a silpat mat. Using your hands roll the chilled dough into tablespoon-sized balls. Place them on the cookie sheet and place them back into the freezer for 10 minutes.
  4. Eat the balls immediately or store in an airtight container in the refrigerator for up to 2 weeks.

Notes

*Store-bought cashew butter should only contain cashews and salt in the ingredients list. I find it is cheaper to make my own cashew butter, and it’s pretty easy to do. The same instructions apply for making both my cashew butter and my Two-Ingredient Homemade Almond Butter.
