Can you believe that it’s officially Thanksgiving week?!?!
The last thing you probably expected me to share the Monday of Thanksgiving week is a granola recipe, right?! I mean what happened to the Thanksgiving sides?!
They’er still there for you to whip up a Thanksgiving storm in your kitchen!
I wanted to talk about hostess gifts for Thanksgiving. If you’re like me, you go to family member’s house’s for Thanksgiving and sometimes it’s nice to bring a hostess gift. Of course you bring whatever side dish or drink they ask you to contribute with for the meal. Granola is not to be found on the Thanksgiving table…what I’m talking about is a little gift just for the hostess.
This chocolate coffee granola is just the perfect hostess gift. Here are a few reasons:
- breakfast the day after Thanksgiving is often forgotten about because all our planning goes to Thanksgiving dinner. Providing an easy breakfast for your hostess will be so helpful – especially if they have any overnight guests.
- It’s so easy for you to make but tastes so impressive.
- You can make chocolate coffee granola up to several days in advance.
- It’s vegan and gluten free making it perfect for almost anyone
- it’s pretty darn delicious!
So many reasons chocolate coffee granola makes the perfect Thanksgiving hostess gift!
Or if you’re hosting the Thanksgiving yourself it’s a great way to make a little breakfast in advance so that you don’t have to do as much cooking the next morning.
Also, chocolate coffee granola would make a great Christmas edible gift – so many reasons and uses.
Okay but let’s discuss what’s in chocolate coffee granola:
- old fashioned oats (gluten free friendly, if needed)
- unsweetened coconut flakes
- pecans or other nuts (hazelnuts would be extra delish)
- cocoa powder – for that chocolate-y goodness
- coffee grounds – for the ultimate mocha experience
- pure maple syrup – naturally sweetened is the way to go
- coconut oil– to help the granola become nice and crunchy
Easy, right?! I bet you have all or most of these ingredients on hand already!
Anyone who knows me knows I do not like coffee, I’m a tea girl. BUT coffee ice cream is my favorite ice cream and I like chocolate covered espresso beans – weird, I know!
That’s what this chocolate coffee granola is to me, it’s kind of reminiscent of a chocolate covered espresso beans. The crunchy coffee grounds bake right onto the granola and the chocolate goes perfectly with the ground coffee. The coconut flakes and pecans are a nice crunch and extra flavor boost to the granola.
If you’re thinking…”um chewing coffee grounds sounds weird!” Trust me, the coffee grounds get nice and toasty and crunchy and you’ll love it!
My fave way to enjoy this chocolate coffee granola is with some almond milk. Pretty much turns into an instant mocha experience. I also like it over some plain Greek yogurt that I sweeten with at touch of maple syrup. Either way I usually serve this chocolate coffee granola with some bacon or sausage, or eggs on the side for a balanced meal.
I mean, who doesn’t want chocolate and coffee for breakfast?!

Description
Chocolate coffee granola is the perfect make ahead breakfast or snack. It has cocoa powder and coffee grounds baked right in. So easy to make!
Ingredients
- 3 cups gluten free old fashioned oats
- 1 cup raw nuts of choice (cashews, almonds, walnuts, pecans, hazelnuts* are all good)
- 3/4 cup unsweetened coconut flakes (if you’re not a fan than swap for more oats or nuts)
- 1/2 cup unsweetened cocoa powder
- 1/3 cup ground coffee (use decaf if you want to avoid the caffeine)
- 2 teaspoons cinnamon
- 1/4 teaspoon salt
- 1/4 cup coconut oil, melted
- 3/4 cup pure maple syrup
- 1 teaspoon pure vanilla extract
Instructions
- Prepare: Preheat your oven to 350 degrees Fahrenheit
- Mix: Add the oats, nuts, coconut flakes, cocoa powder, cinnamon, salt, and ground coffee to a large mixing bowl. Mix to combine. Add the melted coconut oil, maple syrup, and vanilla extract. Mix until everything is well combined and the granola is wet.
- Bake: Transfer the granola to an extra large rimmed baking sheet (or use two large baking sheets) and spread the granola out so it’s in an even layer and not too crowded. Bake for 10 minutes, stir and bake for another 8 to 10 minutes, stirring every 5 ish minutes to prevent burning. Be careful because it does burn easily.
- Cool: allow the granola to cool completely – it will crisp up as it cools.
- Serve: eat as is or with milk of choice or some Greek yogurt.
- Store: Store leftovers in air tight containers at room temperature for up to 1 week
Notes
*Hazelnuts: hazelnuts would be especially great with the coffee and chocolate. Follow the steps inthis recipe for how to pre-roast and remove the skins if you use hazelnuts.
