Packed with good-for- you ingredients this chia pudding is great as part of your breakfast or as a healthy snack or dessert.


Ingredients

Units Scale
  • 2 cups unsweetened almond milk (or any type of milk)
  • 1/2 cup chia seeds
  • 2 teaspoons green tea matcha powder*
  • 2 teaspoons pure vanilla extract
  • pinch salt
  • 2 to 4 tablespoons agave nectar (or maple syrup)
  • Optional toppings
  • 1 cup fresh fruit such as mango or kiwi or sub any kind you prefer
  • 1/4 cup sweetened toasted coconut flakes


Instructions

  1. Make the pudding: In a medium mixing bowl combine all of the pudding ingredients until everything is well mixed. Cover and chill in the fridge for 4 to 6 hours, or until the pudding has thickened.
  2. Serve: Give everything a nice stir and transfer to serving bowls. Top with your choice of fruit or toasted coconut flakes, if desired.

Notes

*I suggest Jade Leaf matcha green tea powder. I buy it on Amazon.

To make the pudding set faster heat 1/2 cup milk in the microwave until it’s very warm, but not boiling. Stir in the chia seeds, allow to set at room temperature for 10 minutes. Stir in remaining ingredients and chill in fridge for 1 hour. I have only tried this method once, it worked well. 🙂

Keep in mind that this recipe does contain caffeine.
