A few weeks ago on Instagram stories I asked you to vote on which frozen cocktail recipe you most wanted to see on the blog before summer ends. Frozen sangria, or pina colada and majority ruled for the pina colada! Thanks for the votes! P.S. don’t worry I will keep that frozen sangria idea filed away for next summer….cause red wine sangria in frozen form,….I GOTS TO TRY IT!!!
But guys, this healthier pina colada is summer cocktail perfection in a glass! Seriously, I never want to stop drinking them! Pineapple and coconut in a frosty frozen concotion with rum!!!!
Your Friday night has arrived!
4 simple ingredients for healthier pina colada:
- coconut milk ice cubes (freezing the coconut milk helps to keep things extra frosty)
- pineapple juice
- frozen pineapple chunks (for a little extra pineapple kick)
- light rum (I highly recommend coconut rum, makes a huge difference)
- ice cubes (okay technically that’s a fifth ingredient but it’s frozen water so it doesn’t really count!)
Place everything in a blender and blend away until you have reached tropical city!
Hey, notice how there isn’t any sweetener added to this pina colada?!?! The pineapple juice and frozen pineapple are sweet enough that nothing else is needed. LOVE IT!
I tested this pina colada several times for you…it’s a hard job but someone has to do it ha! From the start I was using coconut milk ice cubes, and pineapple juice but something was missing. When I added a little bit of frozen pineapple and the coconut rum instead of regular rum I knew we had a winner!!!
Seriously those frozen pineapple chunks add a little more body and texture and pineapple-y sweetness to the drink and the coconut rum adds another level of coconut-y flavor that was missing.
Just as good as a store bought pina colada mix but so much healthier for you!!! No artificial flavors or sweeteners. And you’ve got healthy fats from the coconut milk and vitamin C from the pineapple! It’s practically health food ;).

Description
This healthier pina colada is frosty, creamy, and perfectly sweet. it’s made without any artificial flavors or sweeteners, just wholesome ingredients. Perfect summer cocktail.
Ingredients
- 1 cup light coconut milk, frozen into ice cubes
- 8 ounces pineapple juice (unsweetened)
- 1/2 cup frozen pineapple
- 4 to 6 ounces light rum (I highly suggest coconut rum)
- Optional Garnishes
- Pineapple slices
- Maraschino cherries
Instructions
- Freeze coconut ice cubes: 5 to 6 house before you plan to make your pina coladas pour our coocnut milk into an ice cube tray and pop into the freezer until it’s fully frozen.
- Blend: To a blender add the pineapple juice, frozen coconut milk cubes, frozen pineapple and rum – blend until smooth. Add a handful or two of ice cubes, blend until frozen and frothy.
- Serve: Pour the pina colada into two small cocktail glasses or 1 large one. Garnish with a pineapple slice and Maraschino cherry, if desired. Serve with a straw and enjoy immediately.
Notes
I highly highly recommend using coconut rum. I have tested it with both regular rum and coconut rum and found the coconut rum really added an extra level of coconut flavor. I like RumHaven, it’s flavored with coconut water.
A straw is 100% needed for this drink. Paul tried to drink it without a straw and found that he missed a lot of the flavor that had sunk to the bottom. Plus a straw allows you to stir the drink occasionally, which is needed – and it’s festive. 🙂

Where do you find unsweetened pineapple juice?

Dole makes an unsweetened pineapple juice in a carton. I find it by the other juices, in the refrigerator section. Or I find some that’s in smaller cans that’s not refrigerated. Hope that helps 😊
