It’s FINALLY here! Today is the day we’ve all been waiting for! It’s Homemade Gluten Free Oreo day! See, I told you, best Monday EVER!
I have been building up your excitement and anticipation for this post. First I made my Vegan Cashew Frosting and told you that we would be using it for a recipe coming soon. Then I made my Gluten Free Chocolate Cookies and told you to be prepared and excited and ready for what was to come on Monday!!! And now Monday is finally here! Yes, I could have shared this recipe idea in the very same post as the Gluten Free Chocolate Cookies, BUUUUTTT those cookies can be a dessert of their own, because chocolate cookies! However, these Homemade Gluten Free Oreos are so good that they are worthy of their very own post! I mean come on we are talking about HOMEMADE OREOS! Can life get any better?!
Oreos remind me of college because one of my roommates was obsessed with them. We couldn’t have a party without oreos present. Trust me, I enjoyed every minute of those chocolate, crunchy cookies filled with that sugary….cream? or is it frosting? Either way those oreos never failed our college parties and they hold a little place in my heart.
Homemade oreos are a slightly more sophisticated version of the pre-packaged, store bought cookie we are all familiar with. Homemade oreos taste of fresh baked love with the hint of Christmas joy (too cheesy?). But you get what I’m saying right? Homemade cookies always taste better and have a different feeling to them. Yes cookies have feelings!
These Homemade Gluten Free Oreos are made with my Soft, Gluten Free Chocolate Cookies that are laced with chocolate chips. In between two of those soft chocolate cookies is my creamy, fluffy, melt-in-your-mouth Vegan Cashew Frosting! Each bite is reminiscent of those pre-packaged oreos we all know yet, these homemade ones are slightly more grown up, because we have refined taste buds. Oh yeah, did I mention these homemade oreos are also dairy free?! Bonus points!
I know, I know traditional oreos are mad with a crunchy chocolate cookie but these homemade oreos are like soft pillows of joy! BUT if you want a crunchy cookie for your oreos then I have a solution for you: Thin and Crispy Chocolate Cookies! Yes they are still gluten free. I made these cookies ages ago and they were pretty amazing. I think they would make a great crunchy oreo if you wanted to go the more traditional route.
Either way the combo of the chocolate-y cookie filled with that luscious Vegan Cashew Frosting is pretty much the purpose of life. Enjoy your best Monday ever! 🙂

Description
Soft chocolate cookies that are filled with rich, melt-in-your-mouth vegan cashew frosting.
Instructions
- Make a batch of thevegan buttercream frosting. Once it’s made allow it to sit at room temperature so that it’s easy to spread on the cookies.
- Make a batch of the Gluten Free Chocolate Cookies. Allow to cool completely, 1 to 2 hours.
- Once the cookies are cooled spread about 2 tablespoons of the frosting on the bottom side of one cookie and place another cookie on top of that cookie. Serve immediately.
- If you need to make the oreos ahead of time you can assemble each one and then individually wrap the oreos in plastic wrap. Keep them at room temperature. You can do this up to 1 day ahead of time, however they are best when fresh.
Notes
*These oreos are made with soft cookies. If you prefer a crunchy cookie you could try making the oreos with my Thin and Crispy Chocolate Cookies, which are also gluten free.
For a lighter oreo you could just spread the frosting on one cookie. We found this is what we usually prefer to do because the oreo sandwiches are quite filling.
You could make the Vegan Cashew Frosting up to 5 days in advance and store it in an air tight container in the fridge until ready to use. I do suggest making the cookies the same day or only 1 day before you plan to eat the oreos because the cookies are really best the fresher they are.

I tried for the first time your 4 ingredients dark choc frosting, it is such so good. Now I am looking for a dark choc fudge cake mix recipe to go with the frosting. Trying to stay away from all the refine sugar.
