Happy St. Patrick’s Day!!!!! 🍀

I love the opportunity to celebrate anything Irish so much that I had to take this opportunity to share just one more Irish recipe with you.

What feels more Irish then potatoes? (At least, to us Americans lol).

Today, we are making Irish champ.

What is Irish champ?

Essentially mashed potatoes with milk, butter, and a ton of green onions!

Sounds great, right?

How can you go wrong with buttery mashed potatoes and green onions?

This is my take on a traditional Irish recipe.  It is so simple and easy to make, yet so delicious.  Like most Irish recipes, there is nothing complicated here, just basic ingredients that are elevated to make something special.

Ingredients for Irish Champ:

  • yukon gold potatoes (or other waxy potatoes) – the waxy variety of potatoes lends a nice creamy mashed potato that isn’t gummy, or starchy.
  • kosher salt – potatoes always need salt for flavor.
  • green onions – and lots of them. We use the entire green onion here! 
  • garlic – minced, and sautéed in butter for a hint of garlicky goodness throughout our mashed potatoes.
  • whole milk – for a nice creamy, rich texture. Normally I like to cook with skim milk, but mashed potatoes require whole milk for the best creamy texture and flavor.
  • butter – Irish butter is preferred here, of course. What’s mashed potatoes without rich, creamy butter?
  • black pepper – for flavor.

That’s it. 7 simple ingredients, for one tasty side dish to be enjoyed on St. Patrick’s day!

How to make Irish Champ:

  1. Boil the potatoes – boil the potatoes until fork tender. Drain, and mash.
  2. Sauté the onions – In a separate sauce pot sauté the white parts of the green onions along with the garlic. Then, warm the milk up.
  3. Mash the potatoes –  I like  to use an electric hand mixer for a creamy texture, but a masher works great too. Add the butter and warmed milk, along with the onions.
  4. Stir in the remaining onions – stir in the reserved dark green onions.
  5. Serve – top with extra butter and dark green onions. And enjoy.

On St. Patrick’s day, obviously!! 😉

Honestly, you could make this mashed potato recipe any time you want mashed potatoes with a little something extra. Any holiday, or occasion, or even on a weeknight.

When don’t we want mashed potatoes in our life?

What to serve with Irish champ:

You could serve Irish champ as a side dish to literally anything. It would be great with any cut of meat, or other protein packed entrée you enjoy. 

Here are some more ideas of what to serve Irish champ with:

  • instant pot whole chicken
  • sheet pan maple pork chops with apples and cabbage
  • easy salmon patties with herby slaw
  • steak with mushroom sauce
  • sheet pan chicken and asparagus with lemon tahini sauce
  • sheet pan Italian sausage and peppers

This part Irish girl will most likely celebrate with either some whiskey on the rocks, followed by an Irish coffee over the weekend. It’s our tradition.

It’s also my tradition to talk Paul’s ear off about memories of my time studying abroad in Ireland. I usually end up busting out my Ireland scrap book at some point. Followed by discussions about when we can visit Ireland again.

Description

Irish champ is buttery mashed potatoes loaded with green onions. This simple side dish is delicious served with a variety of entrees.


Ingredients

Units Scale
  • 2 pounds yukon gold potatoes, peeled and cut into 1 inch chunks
  • 1 1/2 to 2 teaspoons kosher salt, divided
  • 2 bunches green onions
  • 3 to 4 garlic cloves, minced
  • 3/4 cup whole milk
  • 3 tablespoons unsalted butter, divided (plus 1 extra pat for topping)
  • 1/2 teaspoon black pepper

 


Instructions

  1. Prepare: Along with peeling, and chopping the potatoes, prepare the other ingredients. Slice all of the green onions, the entire length of the onion. Divide the white, and light green parts of the onion from the dark green parts. Mince the garlic, set everything aside.
  2. Boil the potatoes: Place the peeled and chopped potatoes in a medium sized pot with a tight fitting lid. Add 1 teaspoon of the kosher salt to the pot. Add cold water, just until the potatoes are covered. Cover the pot with the lid and turn the heat on high. Bring the water to a boil, reduce to a simmer. Simmer the potatoes for 6 to 8 minutes, or until the potatoes are fork tender. Drain the potatoes in the sink using a colander. Once the potatoes are well drained, transfer them back into the pot.
  3. Sauté the green onions & warm the milk: While the potatoes are boiling, heat a small sauce pot over medium heat. Melt 1 tablespoon of the butter. Then add the white parts, and light green parts of the onions. Sauté, stirring frequently, until the onions are soft and tender, about 2 minutes. Then add the garlic, sauté for 1 minute. Add the milk to the pot, turn the heat up to high, and allow the milk to  heat up, just until it’s warm – don’t allow it to boil. Remove from the heat.
  4. Mash the potatoes: To mash the potatoes use a potato masher, I like to use an electric hand mixer for a smoother consistency. Add about half of the milk, along with 1/2 teaspoon of kosher salt, the pepper, the 2 tablespoons of butter. Add the remaining milk, along with the sautéed green onions. Stir, with a spatula to combine. Taste and adjust the seasoning as needed, adding the remaining 1/2 teaspoon of salt, if needed.
  5. Finish: Gently fold in half of the dark green parts of the green onions.
  6. Serve: To serve, add an extra pat of butter on top and sprinkle with the remaining dark green onions. Enjoy immediately. Serve the potatoes as a side dish to any meal, or protein you enjoy.  (See post for suggestions on entrée dishes to serve the Irish champ with).

Notes

To store leftover the potatoes: Allow the potatoes to cool completely, then transfer them to an airtight container. Keep them in the fridge for up to 1 week.

To re-heat: Gently re-heat the potatoes in the microwave, adding a little milk to moisten them back up again. You can always add a little more butter on top too, if you want.
