Matcha Cherry Energy Balls

Description

These energy balls are sweet, slightly grassy from the matcha and studded with tart dried cherries. They are packed with healthy carbs, fats, and proteins making them a great snack. Plus, they are easy to make!


Ingredients

  • 1/2 cup flaxseed meal
  • 2/3 cup shredded coconut
  • 1 cup gluten free rolled oats
  • 1/2 cup dired cherries, chopped (could also sub in dried cranberries)
  • pinch fine sea salt
  • 2 to 3 teaspoons good quality Matcha powder*
  • 1/2 cup all natural almond butter (only ingredients should be almonds and maybe salt)
  • 1/3 cup honey (can sub agave nectar if vegan)
  • 1/2 teaspoon pure vanilla extract


Instructions

  1. Add all ingredients in a large mixing bowl and mix until well combined. Sometimes I find it’s easiest to mix all of the ingredients with clean hands. Grab a piece of the dough and pinch it together to see if it sticks together nicely. If it seems dry add more almond butter or honey.
  2. Cover and refrigerate for 30 minutes, this helps to prevent sticky hands when rolling into balls. Once refrigerated use the palm of your had to squeeze the dough to create a small ball. Then use both hands to roll it into more of a ball shape. You should have about 21 balls.
  3. Cover and store in the refrigerator for up to 5 days. Or even longer in the freezer.

Notes

*Matcha is a unique taste, if you are just starting to use it I suggest using 2 teaspoons of Matcha and taste it to see if you want to add more.

*Different types of Matcha powder can be made differently which affects the quality, health benefits, and flavor of the Matcha. If you already know of a good brand than use that, but if you are just starting out with using Matcha I highly recommend Jade Leaf’s Matcha. It can be purchased on Amazon and comes in several different sizes.

Prep time does not include time required to chill dough.
