Pineapple Mojitos

Description

These mojitos are refreshing, minty, and slightly sweet. They’re easy to make and even easier to drink!


Ingredients

Units Scale
  • 1 cup mint leaves, packed ( I used a combo of peppermint and spearmint because that’s what I have in my garden, but any kind will do)
  • 3 ice cubes
  • 1 to 2 shots of light rum
  • Juice of 1/4 of a lime
  • 6 ounces unsweetened pineapple juice
  • Sparkling plain water, unsweetened
  • Fresh pineapple slices for garnish, optional
  • Extra mint leaf sprigs for garnish, optional


Instructions

  1. Add the mint leaves to a cocktail shaker. Use a muddler or the back of a wooden spoon to muddle the mint leaves to release all of their oils.
  2. Add the ice cubes, rum, lime juice and pineapple juice to the shaker. Shake until everything is well combined and the ice has mostly melted, about 1 minute.
  3. To your serving glass add a few more ice cubes (or an over sized ice cube). Use a spoon to transfer a few of the crushed mint leaves into the class, leaving most of them in the cocktail shaker. Place the lid back onto the cocktail shaker and strain the liquid into your serving glass.
  4. Top the mojito with the sparkling water. Gently stir to combine.
  5. Garnish with a pineapple slice, and a mint sprig, if desired. Serve immediately.
  6. Repeat this process for as many drinks as you need.
