Do you ever want pumpkin pie for breakfast but you know it’s not the healthiest option?
Now you can eat oatmeal that tastes pretty darn close to eating a slice of pumpkin pie. Breakfast that tastes like dessert FTW!!!
This pumpkin oatmeal is super easy to make! Only takes about 7 minutes to make and it’s cooked in the microwave. It literally makes your kitchen smell like pumpkin pie has been baking away. I mean, if that alone is not incentive to make this recipe I don’t know what is!
Best way to start any day of the week if you ask me!
As you read in the title of this post this pumpkin oatmeal is packed with protein. Yes, oats naturally have some oats in them but we add even more in an unusual way, but I promise you will love it!

Okay, I’ll tell you!!!
EGG WHITES!!!
That’s right, we cook egg whites right into the oatmeal for added protein. I know it sounds kind of weird, but don’t knock it until you try it.
And don’t worry it’s not like there will be scramble egg whites in your oats, we temper them and add them slowly so they won’t scramble. You won’t even know they are there, promise. Bonus: the egg whites make your oatmeal extra fluffy, kind of almost like souffle texture. So good!
The other ingredients in pumpkin oatmeal are:
- old fashioned, rolled oats (obviously)
- pumpkin pie spice
- pinch of salt – for balance
- water
- canned pumpkin puree – the real deal
- vanilla extract
- maple syrup – perfect for any fall flavors
- egg whites – just didn’t want you to forget
- Yogurt “whipped cream” topping – Greek yogurt, maple syrup, and vanilla – so good!
- pepitas, pecans, or walnuts – for topping
That’s it my friends. Hearty, healthy, wholesome ingredients that taste pretty much like pumpkin pie.

TBH pumpkin oatmeal is even tasty and satisfying for lunch. I ate it as part of my lunch the other day because I had to photograph it and I couldn’t resist that steaming bowl of pumpkin pie in a healthy breakfast form.

Description
Pumpkin oatmeal tastes like pumpkin pie in breakfast form. It’s packed with healthy ingredients, and only takes 7 minuets to make. Perfect weekday breakfast!
Ingredients
Pumpkin oatmeal:
- 1/3 cup old fashioned rolled oats
- 1/2 teaspoon pumpkin pie spice (click here for the recipe)
- pinch of salt
- 2/3 cup cold filtered water
- 2 tablespoons canned pumpkin puree (not pumpkin pie filling)
- 1 teaspoon pure vanilla extract
- 2 to 3 tablespoons pure maple syrup
- 1/4 cup egg whites (I buy egg whites that come in a carton)
Yogurt “whipped cream” (optional):
- 3 tablespoons plain Greek yogurt (full fat would be really yummy here)
- 2 teaspoons pure maple syrup
- splash of pure vanilla extract
Optional Toppings:
- pecans or walnuts
- pepitas (shelled pumpkin seeds)
Instructions
- Mix: To a microwave safe bowl add the oats, salt, and pumpkin pie spice. Give it a quick stir so that everything is well combined. Add the water, pumpkin puree, vanilla, and maple syrup – set the egg whites aside for now.
- Cook: Pop the bowl of oats in the microwave for 1 minute.
- Add the egg whites: Remove the bowl from the microwave and very slowly stream the egg whites into the oatmeal with one hand while stirring the oatmeal with the other hand until all the egg whites are mixed into the oatmeal. Don’t dump the egg whites in all at once, otherwise they will scramble from the heat of the oats.
- Cook again: Return the bowl to the microwave and cook on high for 1 more minute. The oatmeal will have puffed up quite a bit from the egg whites. It’s okay if the center is some what loose, they are still cooked enough. Give the oatmeal a good stir, it should be thick an creamy…and make your kitchen smell like pumpkin pie! YUM!
- Make the yogurt “whipped cream” (optional): in a small bowl combine the Greek yogurt with the vanilla and maple syrup.
- Finish: Top the warm oatmeal with the yogurt “whipped cream” and any of the pecans, walnuts, or pepitas you would like. Garnish with a dash of cinnamon or extra pumpkin spice, if desired. Enjoy immediately.

To make 2 servings: You can easily double this recipe to make 2 servings at once. I like to heat mine in a large liquid measuring cup so that the handle doesn’t get as hot in the microwave. I add the two servings to the bowl and microwave for 2 minutes each time. When it’s done I divide the amount between two serving bowls and then top with the desired amount of toppings.
