Ingredients
Units
Scale
- 2 cups green split peas
- 1 yellow onion, chopped
- 4 cloves garlic, minced
- 3 carrots, peeled, and cut into 1 inch chunks
- 3 celery stalks, cut into 1 inch chunks
- 6 cups chicken stock (use ham stock if you happen to have it)
- 1 1/2 teaspoons dried, ground sage
- 2 small bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon each salt and pepper
- Optional: few dashes of hot sauce
- 2 teaspoons of liquid smoke (if you have a ham bone use that instead of the liquid smoke)
- 2 to 3 tablespoons olive oil
- 1 pound ham, cubed (I used pre-packaged cubed ham)
Instructions
- Place all ingredients, except for the ham, into the slow cooker. Stir everything together to combine. Cook on low for 4 ½ to 5 hours or on high for 2 ½ to 3 hours. The split peas should be tender and slightly falling apart.
- If you have a ham bone, remove it. Also remove the bay leaves.
- Stir in the ham and allow to cook for another 10 minutes, just until the ham is heated through. Taste and adjust seasonings; you may want to add more salt and pepper to your liking.
- Serve immediately. Store leftovers in an airtight container for up to 1 week. Reheat gently. If the soup gets too thick add a little water or chicken broth to thin it out.
