Mushroom, Kale, and Goat Cheese Stuffed Acorn Squash

October 17, 2014 By Emily

Nothing screams fall-time like squash. It begins to pop up everywhere in grocery stores, at farmer’s markets, at orchards. I become giddy when I see it at the store. My eyes get big, my mouth starts watering, and my stomach begins to growl. When I see it on sale I begin to load it into my cart with 2 of each variety. Sometimes I contemplate 3 of each. No Joke. When I was a kid I hated squash. I only remember having it once a year at Thanksgiving. It was orange, and mushy, … [Read more...]

Pumpkin Bars with Honey Sweetened Cream Cheese Frosting (GF)

October 10, 2014 By Emily

Pumpkin recipes are officially in full swing! First I made my DIY Pumpkin Puree, and now I present these scrumptious Pumpkin Bars with Honey-Sweetened Cream Cheese Frosting. This recipe was actually requested by a good friend of mine once she saw my DIY Pumpkin Puree post last week. I was happy to oblige; what is not to love about pumpkin bars? They are pretty much a pumpkin spiced cake with cream cheese frosting. They are great for parties because they are easy to transport and can … [Read more...]

Broccoli and Kale Quiche with Quinoa Crust

October 6, 2014 By Emily

They say that breakfast is the most important meal of the day. I couldn’t agree more. I find that the type of breakfast I have really determines how my entire day turns out. I always feel best when I eat a high protein breakfast that is balanced with veggies or fruit and a complex carb such as quinoa. It is on these days that my body and brain function the best. There is one issue; I don’t always have time in the mornings to make such a spread. Solution: Broccoli and Kale Quiche … [Read more...]

DIY Pumpkin Puree

October 3, 2014 By Emily

It’s officially pumpkin season! I love everything pumpkin. From pumpkin desserts to savory pumpkin meals. What better way to kick off the start of pumpkin pie season than with making pumpkin puree at home? DIY Pumpkin Puree is surprisingly easy to make. The most difficult part is getting the sucker open, but with the right tools it’s not so bad. Why make your own pumpkin puree when you can buy it in a can? Great question! Because homemade always tastes better. Trust me, it has a much … [Read more...]

Homemade Almond Milk

September 29, 2014 By Emily

You probably know by now that I grew up in Wisconsin. I was raised on all things dairy. I love cheese, ice cream, fresh whipped cream, and yogurt. I love all dairy products except for one.  Milk. You heard me. I hate milk. It is pure evil. I can’t even smell it without gagging. The only way I can enjoy milk is if it is heavily seasoned as the base of a soup or in hot chocolate. A couple years ago I discovered store-bought almond milk. It still wasn’t my favorite drink, but it was tolerable. I … [Read more...]

Pork Chops with Apples and Gouda

September 26, 2014 By Emily

Fall is officially upon us this week. As much as I admit that I begin to get a little sad to say goodbye to long, hot summer days, I do enjoy all that fall has to offer. I like the cool crisp air, wearing hoodies, vibrant tree colors, cuddling up on the couch with a blanket, book, and hot cup of tea. And of course, I especially love the food that fall brings. What’s not to love about fall-time food? You’ve got pumpkin-spiced desserts, winter squash, heart-warming soups, and of course crisp, … [Read more...]

3-Seed Gluten Free Crackers

September 22, 2014 By Emily

Don’t we all enjoy a crispy, salty, buttery cracker with a piece of cheese or a dip? Usually those crackers aren’t very nutritious or filling, leaving you unsatisfied. Plus most of them are laced with a ton of salt, preservatives, unnecessary fats, and contain a ton of other crazy ingredients you can’t pronounce. Seriously, read the label; do you know what half of that stuff is? And they are heavy on the gluten and carbs. Moral of the story: store-bought crackers really are not a healthy … [Read more...]

Vanilla Frozen Yogurt with Chocolate Swirl

September 15, 2014 By Emily

On Friday I made Gluten-free Cherry Crisps for Two. I knew I would want to enjoy ice cream with my warm, bubbly cherry crisp. I got an ice cream maker for my Birthday and have been itching to try it out. I knew I wanted to make a vanilla-based ice cream plus chocolate to complement the cherry crisp because cherry and chocolate were made for each other. But I didn’t want the chocolate to be overpowering, so I settled on a chocolate ganache that is swirled into the vanilla. Yogurt … [Read more...]
