Who's ready for some sheet pan pineapple shrimp fajitas topped with dollops of avocado crema?!?! The shrimp + the pineapple + the avocado crema = a tropical vibe fajitas. It's snowing/sleeting here today after a few sunny 50 degree days...tease...I'm so on board these warm weather vibing fajitas! Alright March, let's do spring! I have a love for Mexican food, but ever since my time in San Antonio and Arizona where a lot of Tex Mex food our Midwest Mexican food kind of seems drab in comparison. … [Read more...]
Slow Cooker Spicy Carnitas
Today is our second day of Cinco De Mayo recipes and we are making Slow Cooker Spicy Carnitas! I love this holiday, mostly for the excuse to drink margaritas and eat Mexican food!!! Why can't every nationality have a holiday here in America? Makes sense, right? I mean America is a melting pot of heritages anyways. How amazing would it be to have an Italian day and eat all of the Italian food or an Indian day and stuff our faces with Indian food all day long, or a French day, maybe a Thai day?! … [Read more...]
Shredded Chicken Nachos with Corn Pico De Gallo
Nachos can often be my “I don’t have any food left in the fridge” meal. It’s too easy. I simply throw some corn tortillas onto a baking sheet, top with loads of shredded cheese, maybe some leftover chicken or ground beef. Then a handful of leftover veggies and a boat load of salsa, and dinner is served. Remember that Slow Cooker Pulled Chicken I made a few posts ago? Yup, we’re making use of that juicy chicken on these nachos. What could be easier? Half of the work is already done for … [Read more...]
Grilled Corn and Black Bean Guacamole
I have a confession to make: I didn’t make my first batch of summertime guacamole until 2 weeks ago! What’s wrong with me? How did I allow so much of the warm weather to pass by without making guacamole? It’s blasphemy! Don’t worry, I have since been making up for it by whipping up at least one or two batches of guacamole per week. I think it’s impossible for me to ever get sick of eating guacamole. Usually I make my basic guacamole recipe. It is the simplest to make, with the most basic … [Read more...]
Creamy Sundried Tomato and Chipotle Dip
You know those moments in life when things don’t go as you’d planned them, not even a little? This recipe was exactly one of those moments. During Christmas I was in Texas visiting family and we went out to eat at this amazing Mexican restaurant. It was a huge treat for us to enjoy a really good Tex-Mex restaurant. Remember, I discuss how Midwestern Mexican food doesn’t even compare to Mexican/Tex-Mex in Texas? This wonderful restaurant in Texas served us chips and salsa of course, but it … [Read more...]
Zucchini and Portobello Steak Fajitas
Hey friends, are you ready for Cinco de Mayo in a few days? I am! I am! With my margarita in hand I will be enjoying a big helping of these incredibly delicious Zucchini and Portobello Steak Fajitas! Yum! Confession time: I have never been a big fan of fajitas. I couldn’t put my finger on why I never wanted to order them at Mexican restaurants. I always chose tacos or enchiladas, or my favorite, quesadillas, over fajitas. The reason that I am so tripped up on why I am not a … [Read more...]
Refried Black Beans
With Cinco de Mayo just around the corner I have Mexican food on the brain. I love, love, love Mexican food. Really what we get up here in Iowa is more like Americanized Mexican food. Actually it’s Midwestern-ized Mexican food. I have enjoyed my fair share of Mexican food in Texas and it is a whole new world compared to our Mexican food here. Yes, maybe some of it is considered to be more Tex-Mex, but it is probably way closer to the real deal than our food is here. Let’s just say, Texas is … [Read more...]
