Happy Cinco de Mayo everyone!!! I hope you find some way to celebrate, even if it’s by drinking some margaritas! That’s exactly why I am sharing Tropical Fruit Salsa today. It’s easy to make, pretty darn tasty, and can be served with just about anything – tortilla chips for dipping, on fish, on chicken, on pork! It’s the perfect quick little recipe to celebrate Cinco de Mayo without a whole lot of effort.

Okay, fruit salsa probably isn’t authentic Mexican food, but hey it’s served with tortilla chips, goes well on tacos and a margarita so I think it totally counts! Besides we’ve done pretty well with the authentic Mexican recipes the past few posts. First we made Easy Chicken Mole and then we made Slow Cooker Spicy Carnitas! Go us!!

Tropical fruit salsa is packed with pineapple, mango, kiwis, red onion, cilantro, lime juice, and a jalapeno for a little heat. 7 ingredients and 10 minutes of chopping up fruit and you have a tasty salsa dip on your hands. It’s perfectly sweet with a hint of savory and spice from that onion and jalepeno. As i said before the Tropical Fruit Salsa can be served with plain old tortilla chips making it a great appetizer at any party or a side dish. BUT it is also really delicious over some plain cooked chicken, plain fish, pork, or fish tacos. It even goes well with those Slow Cooker Spicy Carnitas we made on Monday if you’re feeling like swapping out the tomato cucumber pico de gallo. Just like that you can spice up any boring dish! So many possibilities!

Guys this is it, this is one of the BEST times of the year because spring and summer is when all of the most delicious fruits and veggies come to life! I just can’t get enough! Take advantage, my friends.

Speaking of spring produce, if you follow my Instagram stories you will know that about 2 weeks ago Paul and I planted a cherry tree in our yard – which happened to be on Earth Day, not planned but feeling real proud of it! Anyways even though it will take 2 to 3 years for the cherry tree to start producing fruit I am already dreaming up all of the ways I will make use of those cherries! Be ready for cherry salsa, cherry smoothies, cherry crisps, cherry everything coming your way in hopefully 2 years! Maybe if I go talk to the cherry tree every day it will grow faster. Ingredients

Units Scale
  • 1/2 pineapple, diced (about 3 cups)
  • 1 mango, diced
  • 2 kiwis, diced
  • 1/2 medium red onion, diced
  • 1 jalapeno, minced (optional)*
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 1/4 teaspoon salt
  • Tortilla chips (for serving)


Instructions

  1. Add all ingredients to a large mixing bowl. Mix well to combine. You can either serve with tortilla chips right away or let it chill in the fridge for 1 to 2 hours to allow all the flavors to meld.
  2. The salsa is also great served over chicken, pork, or fish. It would be a great addition to my Slow Cooker Spicy Carnitas or any fish tacos.

Notes

*The jalapeno makes this salsa medium spicy. To make it less spicy remove the seeds and membrane. Or you can simply omit the jalapeno.
