Yes this Italian sausage and peppers has become a staple in our house this season, along with my 30 minute sheet pan chicken fajitas. Maybe we just love roasted bell peppers? lol
Whenever I make a recipe in real life that I haven’t already thought up for the blog I ask myself ” is this something I should share on the blog?”. I was hesitant to share this Italian sausage and peppers recipe because it’s almost too simple….”why would anyone even need a recipe for this?” I literally throw everything onto a pan and add some seasonings and GO!
But then I realize that it’s more about the idea of the recipe than it is the actual recipe itself. This specific recipe uses Italian chicken sausage and Italian spices but in the past I have used pineapple and bacon chicken sausage, or caramelized onion chicken sausage and have added spices to coordinate those flavors…or even kept it minimal by using just salt and pepper. The results have been a delicious, healthy meal that’s so quick and satisfying.

Description
Italian sausage and peppers is a super easy and healthy dinner that’s perfect for any weeknight. Clean ingredients, only 20 minutes, and one pan.
Ingredients
- 2 bell peppers, cut into strips (I like to use 1 red and 1 green, but any color will work)
- 1/2 large yellow onion, cut into strips
- 12 ounces Italian chicken sausage (gluten free, if needed)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 to 2 teaspoons Italian seasoning blend
- 1/2 teaspoon garlic powder
- optional: 1/4 teaspoon red pepper flakes
- 2 tablespoons olive oil
Instructions
- Prepare: Preheat your oven to 400 degrees Fahrenheit. Cut up veggies and sausage according to directions above.
- Bake: Add the sausage, peppers, and onions to an extra large rimmed baking sheet. Add the spices and olive oil. Use your hands or tongs to toss until everything is well combined – spread everything in an even layer. Bake for 10 to 12 minutes, or until the peppers and onions have become slightly charred, yet are still crunchy.
- Serve Transfer to plates and serve immediately. Also makes great leftovers.
