Granola bars have never excited me too much; most of them seem to have almost the same amount of sugar, carbs, and calories as a candy bar. I would prefer to just eat the candy bar and stop pretending that granola bars are healthy. Does anyone else agree with me on this? I felt this way about granola bars until I learned that I can make my own. Now I can’t seem to get enough of them! What I love about making my own granola bars is that I can control the level of sweetness. Most … [Read more...]
Slow Cooker pulled Chicken
Hey, friends, how are you on this fine Monday? You all know how I feel about turning on my oven in the middle of summer. I avoid it as much as possible. No central air + oven = sauna kitchen! No more sauna kitchen rants. Read about my previous one here! Chicken is one of my main go-to proteins that we will have throughout the week. I often like to roast a whole chicken in the oven, cut off the meat and then use it however needed all week long. Juicy chicken with crispy skin: … [Read more...]
Fresh Raspberry Margarita
I am the first to admit that I have consumed my fair share of margaritas made from a bottled mix. During college my roommates and I really enjoyed margaritas. We would buy the pre-made mixes at the store and whiz them up in a blender. We also enjoyed a pitcher of margaritas at our favorite Mexican restaurant, and we would definitely take advantage of the 99 cent margarita nights on Fridays at a local restaurant. I mean, come on, 99 cents for a margarita! That place was buzzing with broke … [Read more...]
Cauliflower Balls Stuffed with Cheese
Have you heard of cauliflower pizza crust? The idea is to make a healthy, low-carb, gluten-free option for pizza crust. Sounds like an ingenious idea, especially since cauliflower is a vegetable, right? Wrong! I have tried making it about 3 times. Each time I have been disappointed in how the consistency of the crust holds up. The toppings fall right off, the crust crumbles, and you have to use a fork to eat it. I believe that you should always be able to eat pizza with your hands, … [Read more...]
Mixed Berry Curd
One of my favorite holidays is coming up next week. The 4th of July! I am so excited. I love watching fireworks and enjoying food and laughs with family and friends. There is no way I was going to let 4th of July slip by without a recipe to help put us in the spirit for celebrating the good old US of A. I had a bunch of egg yolks hanging out in my refrigerator because I’ve been making tons of broccoli and cheddar-bacon-quinoa bites lately. Every time I would poke my head into the … [Read more...]
Orange-Whiskey BBQ Sauce
Father’s day is coming up this Sunday! Don’t worry; I’ve got you covered. What father doesn’t love a good barbecue sauce? I know mine does. Make this orange-whiskey barbeque sauce for your dad on Sunday and he will be speechless. It is sweet, tangy, and orange-y, with a hint of whiskey. Serve it with chicken or pork on the grill. Or simply put it in a cute mason jar with a label so that dad can use it whenever he wants and he will think of you each time. The … [Read more...]
Blueberry, Strawberry, Rhubarb Crisp
I know I just posted a rhubarb recipe on Monday, but I still had oodles of fresh rhubarb after I made my savory Rhubarb Chutney. I wasn't about to let my precious rhubarb go to waste. This time I wanted to make the rhubarb into something sweet. I wanted to add a fresh twist on the classic strawberry rhubarb crisp. Blueberries are the perfect fruit to add to the mix. I really enjoyed cutting the rhubarb. It is a gorgeous vegetable, with its hues of pinks and lime greens. I … [Read more...]
