Description

Strawberry banana cucumber smoothie is packed with nutritious ingredients. The cucumber adds a refreshing summer twist. There is plenty of sweetness from the banana and strawberries.

Ingredients

Units Scale
  • 1 1/2 cups milk of choice (I used unsweetened almond milk)
  • 1 cup to 1 1/2 cups English cucumber (seedless cucumber), peeled and roughly chopped
  • 1 1/2 cups frozen strawberries
  • 1 1/2 cups ripe banana, previously frozen
  • Optional: 1 tablespoon flax seed meal or chia seeds

Instructions

  1. Blend: Add all ingredients to a high powdered blender and blend on high until smooth. If you are using a lower powered blender than I find it helpful to add the cucumbers and milk first, blend, and then add the frozen fruit a little at a time and blend until it’s all blended up.
  2. Serve: Divide between two glasses and enjoy immediately. You can garnish with a slice of strawberry or cucumber, if you want to be fancy.

Notes

Spinach: I almost always will add spinach to my smoothies as an easy way to add veggies to my smoothie without affecting the flavor. You certainty can add a handful or two of spinach to this smoothie if you want, just know that it will turn to a muddy color instead of the pretty pink color.
